Oven Roasted Herbed Potato Wedges

Oven roasted potato wedges are a staple around here. We have kids fighting over the last of them on the pan! The beauty of these is that they can be made with any combination of herbs for a delicious side dish.

Try dill & garlic, turmeric & cracked pepper, or a ranch spice mix to create a new taste with every meal! These bake up in 25 minutes & are a great swap for traditional, deep fried fries.

Oven Roasted Herbed Potato Wedges

Ingredients

4 large russet potatoes 2 Tablespoons coconut oil, melted Sea salt Pepper/herbs to season as desired


Instructions

Peel & chop potatoes into evenly sliced wedges. Place in bowl & pour melted coconut oil over wedges. Toss to coat. Sprinkle with sea salt & pepper/herbs of choice (see note for ideas). Bake at 400 degrees F for 20-25 minutes, until fork tender.

Notes

Along with the sea salt, try dill & garlic, turmeric & cracked pepper, or a ranch spice mix!
