Blueberry banana pancakes

Pancakes are what my kids’ dreams are made of.

My 7 year old’s day is completely set if breakfast consists of pancakes. I could learn a thing or two from him!

One thing I don’t love about pancakes, though?

The ‘here now, gone in 25 seconds’ syndrome that seems to come with only eating pancakes for breakfast. Not a big deal if you’re making a full meal with the sausages, orange wedges, etc…

But if you’re looking for a quick & easy breakfast, the traditional ‘light as air and full of fluff’ pancakes just don’t stick around that long.

Enter: Quick and easy blueberry banana pancakes, which are made using aLOTa eggs… Because, eggs are protein and protein sticks around, makes for less blood sugar spikes (#nocrash)… all that nice stuff. So. I like eggs.

These beautiful banana pancakes also have a delightful almond undertone. (Doesn’t that sound all sophisticated…) So not only are you going to have kiddos without blood sugar crashes, you can eat these banana pancakes with a pinkie finger out. (Pass the syrup, darling..)

Blueberry Banana Pancakes

Quick & easy blueberry banana pancakes. Filling and delicious with a hint of almond flavour. These have a gluten free option.



1 large banana, mashed (2/3 cup)

4 eggs

1/3 cup whole wheat flour or gluten-free oat flour

1 pinch salt

1/4 tsp almond extract

1/4 tsp baking soda

1/3 cup fresh or frozen blueberries.


Place pan over medium heat to warm or turn griddle onto medium heat.

Mash banana well.

Add eggs and whisk until combined. Some small banana bits are okay.

Add remaining ingredients (other than blueberries) and whisk to combine.

Lightly grease pan & pour batter from cookie scoop onto pan. Sprinkle blueberries on top.

Cook until golden brown, then flip & cook other side until golden brown.

Enjoy with maple syrup or butter & honey.
