Quick & easy blueberry banana pancakes. Filling and delicious with a hint of almond flavour. These have a gluten free option.
1 large banana, mashed (2/3 cup)
1/3 cup whole wheat flour or gluten-free oat flour
1 pinch salt
1/4 tsp almond extract
1/4 tsp baking soda
1/3 cup fresh or frozen blueberries.
Place pan over medium heat to warm or turn griddle onto medium heat.
Mash banana well.
Add eggs and whisk until combined. Some small banana bits are okay.
Add remaining ingredients (other than blueberries) and whisk to combine.
Lightly grease pan & pour batter from cookie scoop onto pan. Sprinkle blueberries on top.
Cook until golden brown, then flip & cook other side until golden brown.
Enjoy with maple syrup or butter & honey.
